Just do it…

I’m sitting here eating my cream of wheat and drinking my protein shake, its a nice sunny day here in CO (after a week of cloudy rainy weather..hey we are spoiled here…we love our sun!).  I have 7 weeks today till my photoshoot. I have a goal I have to accomplish and even though I know this, I wanted to skip out on my workout today to play outside with my family.  My husband had me watch this speech and I loved it.  This is my way of training/encouraging the fit mom clients I get.  I believe that it is just that simple..Just do it! We all have our days when we want to sit around, or just have “one bit” (which we all know will turn into an entire box of Thin Mint Girl Scout cookes (hey, don’t judge those little suckers are addicting).  But if I were to skip just this one workout what am I doing to myself?? Not getting any closer to my goal am I? Nope.  I want this, just like I know many of you WANT to be fit, you WANT to be healthy, you WANT to have that confidence back in yourself.  So instead of sitting there making excuses for not exercising or not liking the foods you have to eat to GET THERE…JUST DO IT!  I guarantee you will NOT be upset with me when you reach your goals, but you will be upset with yourself if you dont.  On that note, I am off to the gym to kill my biceps and triceps and do my cardio. THEN after a couple hours, I will spend the rest of the day enjoying my family!  xoxo

A moms prayer

With the exception of working full time for 8 months, the last 7 years I have been a stay at home mom. I’m finally going back to school since Lili, my youngest is almost 4! Wow where has time gone?!  In the past 7 years I have found that God has put me on the path of raising my children. I feel that path is about to turn a corner and with Gods guidance he has helped my family get me back to school so I can finish. I still have no exact idea on what I want to be when I finish, but I do know a few factors. I want it to be in health/nutrition and hopefully influencing parents and/or children.  Today is one of those days where I have to stop and ask if this is what I’m supposed to do and ask again for the guidance to get through tough times. In search for some inspiration, I came across this poem and LOVED it and wanted to share.

“Dear Lord, it’s such a hectic day

With little time to stop and pray

For life’s been anything but calm

Since You called on me to be a mom

Running errands, matching socks

Building dreams with building blocks

Cooking, cleaning, and finding shoes

And other stuff that children lose

Getting lids on bottled bugs

I know I’ve mentioned before that being a stay at home mom has a lot of sacrifices, but I wouldn’t change anything! My children, my family is my world!

Vitalicious VitaTops REVIEW

First I want to thank Sarah from Vitalicious for sending some of their products for review.  Betcha thought you’d never here me say how much I LOVE MUFFIN TOPS!! :) I must say that from the day I received the email saying they were on their way to the day I saw the box on my front porch I was so excited to try these!  Each one of these tasty muffin tops is only 100 calories and full of vitamins and minerals, 4-10 g fiber, 3-5 g protein, trans fat free and low sodium.  HERE is a link to their store with all their products and flavors.  I tried at least a bit of each flavor but I would have to say my favorites were the Apple Crumb, Fudgy Peanut Butter Chip, and the Pumpkin Spice.  Now I found a secret to make these even MORE delicious (ya, and you thought that wasn’t possible!). Microwave them for about 12-15 seconds. OH MY GOODNESS. It’s fresh baked muffins! They have that nice “slimy layer” (as I call it) on top and just melt in your mouth! Now, because of the  high fiber they do make you thirsty. So pair a Vita Top up with a cup of coffee, almond milk, water, or a protein shake!  For me these made a GREAT after workout meal, dessert alternative, and wonderful snacks for the kiddlets.  My son took them to school for his snack and I felt good knowing he was getting a healthy treat that he loved.  These will be a staple in our freezer (yes please freeze them after you get them) for our kids snacks and for my afer workout sweet tooth!

Excuses

Do you make excuses to your own health? “I’m tired” “It’s too early” “Maybe tomorrow”…we all do.  What is the best way to overcome our own minds and bypass these excuses and get our butts in shape?  Planning, goal setting, getting  an accountability partner, hire a trainer, etc.  We control our lives and we are in control of our schedules. If you aren’t, you may want to take a step back and get your life back in control!

“For whatever a person succumbs to (i.e., is controlled by), to that he is enslaved” (2 Pet. 2:19).  Do you want to be controlled by your job, financial troubles, society?? Getting into shape and maintaining a healthy lifestyle isn’t easy. Otherwise everyone would be and America wouldn’t be the MOST unhealthy country in the world with shockingly high obesity rates.  The only one that is going to change YOUR future and YOUR children is YOU.  No excuses.

On a different note, I am going to finally get that free 5 page cookbook done. This is taking me a LOT longer than I thought! Thanks for being patient.  I also have to finalize the review for those Vitalicious muffin tops.  They are all gone and my family LOVED them! 

I am getting super excited for an upcoming photoshoot with a new photographer, Steven Gage in 8 weeks!  I am working hard and hoping to make this one an awesome shoot!!

I have an exciting new announcement coming up about an online trainer I am adding to our Fit Mom team! He is amazing and he is the one helping me get my buns back in shape for this shoot. Fit Mom Funky Monkey Baked Oatmeal

I found a cute little baking dish at a garage sale today for $1. I have never made a baked oatmeal dish before and was planning on just looking up a recipe but decided I would give it a whirl on my own.  This turned out really good!  I wanted to share it with all of you too!

1 C quick oats
1/4 C oatbran
1/3 C egg whites (about 2 eggs) beaten
1 1/4 C water
3 Tbs unsweetened vanilla almond milk
1/4 tsp maple extract
1 Tbs carob powder
1 medium banana sliced
2 Tbs Agave nectar (used as my sweetener)
2 Tbs freshly ground Almond butter
1/2 tsp baking soda
1/4 tsp cinnamon

Mix together and bake at 350 for 30 minutes. I stirred mine after every 10 minutes.  Make sure to spray your pan with Pam spray first (mistake I made!).

Makes 2 servings, even though I couldn’t finish that much! If you want to make this a cheat meal top with some dark chocolate chips!

Fit Mom Protein Ice Cream

Protein Ice Cream

1 Frozen Cut Up Banana

1 scoop Whey Protein (flavor of your choice)

1 1/2 Tbs Sugar Free/Fat Free Chocolate Pudding (Or  organic cocoa powder. If you use this add a packet or two of Stevia)

1/2 C Unsweetened Vanilla Almond Milk

Handful of Ice cubes

Mix in Magic Bullet and enjoy!

Fit Mom Spinach Quiche

Crust

I used the Bob’s Red Mill Biscuit and Baking Mix. There are directions to how to make a pie crust on the back. Using butter (real) and water.  This mix is gluten and wheat free.  After mixing the dough I greased a pie pan and spread the crust with my hands to make a thin layer all over.  I baked the crust at 425 degrees F for about 12-15 minutes.

Filling

4 whole large eggs
4 large egg whites
3 oz chicken breast (cooked and cubed)
3 slices low fat turkey bacon cooked and crumbled
3/4 C unsweetened almond milk
1 tsp black pepper
1/4 tsp sea salt
1 Tbs organic sweet basil
3 drops Liquid smoke
3 drops Franks Red Hot Sauce (more if you desire)
1-2 garlic cloves chopped
1/2 C red onion chopped
1/4 C spinach

*Saute garlic, onion, and spinach in 1 tsp olive oil until done.  Mix the eggs, almond milk, and spices with a mixer until well mixed.  Add in the onion, garlic, spinach, bacon, and chicken and stir with a wooden spoon.  Pour mixture into warm pie crust.  Top with 4-5 banana peppers. 

Bake at 325 degrees F for about 45min-1 hour.  Or until a toothpick comes out clean.  Pull out of the oven and let sit 15-20 min. Serve and enjoy!!
